Arrange the scallops in a Pyrex dish.
Place it in the refrigerator for 8 to 10 minutes to firm up a bit.
While the scallops cool, squeeze the limes and strain the juice.
Slice the cucumbers thinly or into cubes (in this case, without the seeds).
Finely slice the onion into crescent-shaped pieces.
Grind the chili piquín with a spoon.
Take the scallops out of the refrigerator and add salt and pepper, then add the cucumber, onion, chili piquín, lime juice, and a splash of soy sauce.
Mix everything well with a plastic or wooden spoon and let it sit for about 3 minutes.
