Scallop Aguachile

The scallop aguachile is a delicious scallop dish perfect as a snack. It is a Mexican recipe made with seafood, onion, lime, chili piquín, and cucumber. It is great for snacking or serving as an appetizer.

  • 1/2 kilos ax callus
  • 2 cucumbers, large
  • 1/2 red onions
  • 10 limes
  • 8 piquín chiles
  • soy sauce

  • Arrange the scallops in a Pyrex dish.
  • Place it in the refrigerator for 8 to 10 minutes to firm up a bit.
  • While the scallops cool, squeeze the limes and strain the juice.
  • Slice the cucumbers thinly or into cubes (in this case, without the seeds).
  • Finely slice the onion into crescent-shaped pieces.
  • Grind the chili piquín with a spoon.
  • Take the scallops out of the refrigerator and add salt and pepper, then add the cucumber, onion, chili piquín, lime juice, and a splash of soy sauce.
  • Mix everything well with a plastic or wooden spoon and let it sit for about 3 minutes.
