500 grams ax callus
1/2 cups soy sauce
salt, to taste
pepper, to taste
4 limes, its juice
paprika, to taste
piquín chiles, to taste
1/2 cups olive oil

Clean the scallops and remove the white part that is tougher.
Make a sauce with olive oil, lemon juice, paprika, salt, pepper, chili piquín, and soy sauce.
Let the scallops marinate for 10 minutes.
Heat the grill.
Remove the scallops from the marinade and sprinkle a bit more paprika, salt, and pepper on them.
Cook on the grill and halfway through the cooking, add a bit of the marinade juice.
