Seafood Skewers

Prepare this recipe with seafood, ideal for barbecues, weekends, or simply enjoying with family. It's also a great idea if you don't know what to prepare this Lent, as this seafood skewer recipe includes octopus, shrimp, and squid, along with delicious mushrooms and peppers. This version of skewers is easy to prepare and, of course, topped with melted cheese. What will you serve it with?

  • 2 tablespoons olive oil
  • 1/2 cups onion, in strips
  • 1 cup green bell pepper, in medium cubes
  • 1 cup red bell pepper, in medium strips
  • 1 cup yellow bell pepper, in medium strips
  • 1 cup button mushrooms, sliced
  • 1 cup shrimp, whole and clean
  • 1 cup squid, in rings
  • 1 cup octopus, cooked cut into cubes
  • 1 1/2 tablespoons seasoning sauce
  • salt
  • pepper
  • 2 cups Oaxaca cheese, crumbled
  • flour tortillas, to accompany
  • guacamole, to accompany
  • limes, to accompany

  • In a skillet with enough hot oil, sauté the onion until translucent. Add the green, red, and yellow bell peppers, and cook for a few minutes. Incorporate the mushrooms, shrimp, squid rings, and cooked octopus. Add the seasoning sauce, salt, and pepper to taste; mix and cook for 6 minutes over low heat. Place the crumbled Oaxaca cheese on top, let it melt, and remove from heat.
  • Serve on a large platter. Accompany with flour tortillas, guacamole, and lime.
