400 grams tuna, in medallion
2 avocados
1 orange
2 lemons
2 limes
1/2 grapefruit
1/2 red onions
5 grams fresh cilantro

Remove all the pulp from the avocado halves and place it in a bowl. Mash with a fork until it forms a puree.
Squeeze juice from lime, lemon, and grapefruit. Set aside.
Once the liquid is added, add a pinch of salt and freshly ground pepper. Add chopped fresh cilantro.
Mix the mashed avocado with the citrus mixture. Taste and adjust the seasoning.
Seal the tuna medallion over high heat for 10 seconds on each side; if you don't have non-stick, apply vegetable oil to prevent sticking. Let it rest.
After resting, cut into even pieces in the form of thick slices to your desired thickness.
To plate, on a flat dish, spread a bed of avocado puree. Arrange the slices of tuna on top of the puree. Decorate to your liking.
