  • 1/4 cups white vinegar
  • 3/4 cups olive oil, for the vinaigrette
  • 2 tablespoons old style mustard, for the vinaigrette
  • 2 tablespoons honey, for the vinaigrette
  • 1 clove garlic, for the vinaigrette
  • 3 sprigs dill, 1 teaspoon for the vinaigrette, set aside for garnish
  • 2 pinches salt, for the vinaigrette
  • 2 pinches pepper, for the vinaigrette
  • 4 Dolores® tuna medallions
  • 4 tablespoons olive oil

  • Blend the vinegar, olive oil, mustard, honey, garlic, dill, and season with salt and pepper.
  • Place the tuna medallions in a baking dish and add the vinaigrette, let marinate for 20 minutes in the refrigerator.
  • Heat a medium skillet over high heat, add the tablespoon of oil and sear the tuna until golden brown, cooking for 3 minutes, flip, and continue cooking for 5 more minutes.
  • Serve with the remaining vinaigrette and garnish with dill sprigs.
