2 tablespoons old style mustard, for the vinaigrette
2 tablespoons honey, for the vinaigrette
1 clove garlic, for the vinaigrette
3 sprigs dill, 1 teaspoon for the vinaigrette, set aside for garnish
2 pinches salt, for the vinaigrette
2 pinches pepper, for the vinaigrette
4 Dolores® tuna medallions

Place the tuna medallions in a baking dish and add the vinaigrette, let marinate for 20 minutes in the refrigerator.
Heat a medium skillet over high heat, add the tablespoon of oil and sear the tuna until golden brown, cooking for 3 minutes, flip, and continue cooking for 5 more minutes.
