Shrimp Aguachile Mexican Style

Nothing is more delicious than a rich and fresh shrimp aguachile. Accompanied by cucumber, onion, lime, and cilantro. It's perfect for seafood lovers and for the Lenten season.

1 cucumber
salt and pepper
1/2 Jalapeño chiles, sliced
3 tablespoons fresh cilantro
400 grams shrimp, clean
1/2 red onions, sliced

Cut the shrimp lengthwise without cutting all the way through, place the shrimp on a flat plate.
Marinate with 50 milliliters of lime juice, salt, and pepper. Refrigerate.
Blend half a cucumber, jalapeño, the rest of the lime juice, cilantro, salt, and pepper. Strain and set aside.
Cut the onion into julienne strips, the half cucumber into small cubes, and the jalapeño into very thin slices.
Cover the shrimp with the strained mixture and add the chopped vegetables on top.
