  • 1 clove garlic
  • 1 Habanero chile
  • 1 serrano chile
  • 1 corn tortillas
  • 1 green onion
  • 1 cup basil
  • 1 cup fresh cilantro
  • 3/4 cups lemon juice
  • 1/4 cups white vinegar
  • 2 cups large shrimp, cleaned and peeled

  • 1 tablespoon olive oil
  • 1 cucumber, in strips
  • 1/4 red onions, sliced for serving
  • 1 cup pineapple, in cubes for serving
  • 1 green onion, in rings for serving
  • 1/2 cups cilantro sprouts, of cilantro for garnish
  • 1/2 avocados, in cubes for garnish

  • On a griddle, roast the garlic with the habanero pepper, serrano pepper, one piece of corn tortilla, and one green onion.
  • Blend the roasted ingredients together with the basil, cilantro, lemon juice, and vinegar until you achieve a smooth mixture.
  • Cut the cleaned shrimp in half lengthwise and place them in a bowl. Add the previous mixture, salt, pepper, and one tablespoon of olive oil. Marinate for 20 to 25 minutes.
  • Form rolls with the cucumber strips and arrange them on two deep plates. Add the shrimp aguachile, more cucumber, red onion, pineapple, green onion rings, and decorate with cilantro sprouts and avocado.
  • Before serving, add a touch more olive oil and yellow lemon juice.
