Shrimp and Cheddar Cheese Stuffed Chiles with Tomato Sauce

If you love stuffed chiles, you will love these. They are filled with shrimp and delicious melted cheddar cheese, topped with a soupy tomato puree sauce.

  • 2 teaspoons vegetable oil
  • 2 cloves garlic, finely chopped
  • 1/2 white onions, finely chopped
  • 1 kilo shrimp, small, cleaned
  • 1/2 bunches fresh cilantro, finely chopped
  • 1/4 cups Del Fuerte® tomato puree
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cups Del Fuerte® tomato puree
  • 1 cup shrimp broth
  • 1 pinch oregano
  • 1 pinch cumin powder
  • 1 pinch salt
  • 1 pinch pepper
  • 4 Poblano chiles, ready to fill
  • 100 grams cheddar cheese, grated

  • Preheat the oven to 180° C.
  • Heat a medium skillet over medium heat and add the oil, sauté the garlic and onion, add the shrimp until cooked, add cilantro, and finally the Del Fuerte® Natural Tomato Puree, season to taste, and set aside.
  • For the sauce Add the Del Fuerte® Natural Tomato Puree to a small pot over medium heat to cook a bit, add shrimp broth, season with a little oregano, ground cumin, salt, and pepper to taste until it reduces and becomes a thicker sauce, and set aside.
  • For the chiles Place the cleaned and opened chiles on a baking sheet, fill them with shrimp and cheddar cheese. Cover with aluminum foil and bake for 5 minutes until the cheese is completely melted. Remove from the oven and set aside.
  • On a plate, add some broth, serve a chile, and drizzle with a bit more sauce.
