Shrimp Jicatacos

These delicious shrimp jicatacos are perfect as an appetizer or main dish on a sunny day. They are very fresh, and the filling is full of flavor thanks to the combination of chipotle shrimp, Freshly by EVA® Avocado Ranch Salad, and pineapple pico de gallo. No one will be able to resist trying these tacos!

  • 1 jicama, medium, peeled
  • 500 grams shrimp, medium, cleaned and peeled
  • 1/4 cups chipotle chile in adobo sauce, ground
  • 2 tablespoons pineapple juice
  • 1 tablespoon lime juice
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 cup EVA® freshly chopped salad with avocado ranch dressing
  • 1 cup pineapple, in small cubes
  • 1/4 cups red onion, finely chopped
  • 1/4 cups cilantro, finely chopped
  • 1 tablespoon lime juice

  • Slice the jicama using a mandoline or a knife, ensuring the slices are as thin as possible. Set aside.
  • Mix the chipotle, pineapple juice, lime juice, cumin, salt, and pepper in a bowl. Then add the shrimp and let marinate for 20 minutes in the refrigerator, remembering to cover the bowl.
  • Pour olive oil into a skillet and fry the shrimp for 5 minutes or until they change color.
  • Mix the pineapple, red onion, cilantro, chili, lime juice, and salt in a bowl. Set aside.
  • Place the jicama slice on a plate, add a bed of Freshly by EVA® Avocado Ranch Salad, three shrimp, the avocado ranch dressing, and finally, cheddar cheese flavored extruded cereal and Italian corn. Serve with the pineapple pico de gallo and enjoy.
