Shrimp Skewers with Coconut

A very tasty recipe to serve as an appetizer at a party. The citrus flavor combined with the sweetness and the coconut makes a perfect combination.

  • 3 cloves garlic
  • 1 Jalapeño chile, chopped
  • 1 fresh ginger, peeled and chopped
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1/2 lime zest
  • 1/4 cups coconut milk
  • 2 tablespoons vegetable oil
  • 1/2 tablespoons salt
  • 1 tablespoon pepper
  • 500 grams shrimp, large, peeled, deveined, and washed

  • In a deep bowl, mix the garlic, jalapeños, ginger, brown sugar, soy sauce, lime, coconut milk, vegetable oil, salt, and pepper.
  • Add the shrimp and marinate at room temperature for at least 30 minutes.
  • Place the shrimp on skewers (3-4 per skewer).
  • Heat a grill over high heat until it starts to smoke and cook the skewers until golden brown on each side (approx. 4 minutes).
  • Place the skewers on a serving plate.
  • Cook the shrimp marinade on the grill for 1-2 minutes to thicken and pour over the shrimp.
