500 grams medium-sized shrimp, peeled and deveined
4 limes
1 onion, finely chopped
4 tablespoons olive oil
2 avocados
coarse salt, to cook the shrimp

Bring a large pot of water to a boil with 2-3 tablespoons of coarse salt.
Once the water is boiling, add the shrimp to cook for 3-4 minutes. Remove from the water and place in a deep bowl with ice.
In a deep bowl, mix the chopped onion, olive oil, lemon juice, and 1/2 avocado. Mix well until a uniform dressing is obtained.
With the remaining avocado, make 8 slices like in the photo and place 2 on each plate. Drizzle the avocados with a little lemon juice to keep their green color.
Mix the shrimp with the dressing and place them on the avocado slices. Serve.
