500 grams medium-sized shrimp, peeled and deveined
4 limes
1 onion, finely chopped
4 tablespoons olive oil
2 avocados
coarse salt, to cook the shrimp

Boil a large pot with water and 2-3 tablespoons of coarse salt.
Once the water is boiling, place the shrimp to cook for 3-4 minutes. Remove from the water and place in a deep container with ice.
In a deep bowl, mix the chopped onion, olive oil, lemon juice and 1/2 avocado. Mix well until you get a uniform dressing.
With the remaining avocado, make 8 sheets like the one in the photo and place 2 on each plate. Drizzle the avocados with a little lemon juice to keep them green.
Mix the shrimp with the dressing and place on the avocado slices. It serves.
