Shrimp with Avocado Dressing

Ingredients

4 portions
  • 500 grams medium shrimp, peeled and deveined
  • 4 lemons
  • 1 onion, finely chopped
  • 4 tablespoons olive oil
  • 2 avocados
  • enough coarse salt, to cook the shrimp
  • to taste black pepper

Preparation

Boil a large pot with water and 2-3 tablespoons of coarse salt.
Once the water is boiling place the shrimp to cook 3-4 minutes. Remove from water and place in a deep bowl with ice cubes.
In a deep bowl mix the chopped onion, olive oil, lemon juice and 1/2 avocado. Mix well until you get a uniform dressing.
With the remaining avocado you have 8 slices like the one in the photo and place 2 on each plate. Sprinkle the avocados with a little lemon juice to maintain their green color.
Mix the shrimp with the dressing and place them on the avocado slices. It serves.

PRESENTATION

The plating of this recipe makes it delicious and an excellent way to start a delicious dinner. Decorate your dish with a leaf of parsley or thyme.
