Peel the shrimp, leaving only their tails or fins. Clean and wash them. Season with salt and pepper. Let them rest while preparing the batter.
In a bowl, mix the tempura flour and very cold water, adding the latter gradually until a thick batter is obtained that is not too liquid. If you can't find tempura batter, prepare it with regular flour as follows: One cup of flour, one egg, a pinch of salt, a pinch of pepper, ½ cup of milk, and ½ cup of very cold water.
To prepare the mango sauce, heat oil in a pan over medium heat, then add the onion and fry until transparent. Add ginger and garlic (equivalent to one tablespoon since its flavor is very strong), stir, and add the cubed mango, waiting until the mixture is soft. When the mixture is soft, add chipotle pepper and stir.
Remove the pan from the heat and add lemon juice, salt, and pepper. Let the sauce cool and then blend it.
In another bowl, place the panko (if you can't find it, use your choice of crunchy breading). Meanwhile, in a medium to small deep saucepan, add the oil and let it heat completely.
Dip the shrimp one by one in the tempura batter, then coat them with the breading and immerse them in the hot oil. (Do not add too many at once as they may stick together); cooking will take 2 to 3 minutes maximum.
