Wash the green onion and chop it finely. Wash the red bell pepper and cut it into small cubes.
In a skillet, melt a quarter of a stick of butter over low heat and add the green onion and red bell pepper.
When the butter has melted and absorbed all the flavor from the green onion and red bell pepper, add the shrimp.
Moments before serving, sauté the chiles in butter, season with salt and pepper, and once softened, fill them with the shrimp, green onion, and red bell pepper mixture.
Gratin the chiles in the skillet with the ripe eden cheese for 5 minutes.
