Creamy Shrimp Sopes with BBQ

If you love sopes and want to add them to your Lenten menu, prepare these delicious creamy shrimp sopes with a touch of Hunts® BBQ Chipotle Sauce. You never thought of using BBQ sauce this way. You'll love them!

  • 1/4 tablespoons vegetable oil, for shrimp, beans, and sopes
  • 2 tablespoons pitted olives, finely chopped
  • 1/4 cups onion, finely chopped
  • 1/2 kilos shrimp, clean
  • 1/4 cups Hunt's ® BBQ chipotle sauce
  • 1/2 cups sour cream
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup refried beans
  • 8 sopes
  • 1 cup lettuce, chopped
  • red onion, cut into thin strips
  • queso fresco
  • fresh epazote, for decoration
  • radish, sliced for decoration

  • In a skillet over medium heat, cook the onion and garlic with a tablespoon of oil. Add the shrimp and cook for 5 minutes, then add the Hunts® BBQ Chipotle Sauce and the cream. Cook for 5 more minutes and season with salt and pepper. Remove from heat.
  • Heat a tablespoon of oil in a skillet over medium heat and sauté the beans, seasoning with salt and pepper. Set aside.
  • In a skillet over medium heat, heat the remaining oil and fry the sopes for 1 minute, flipping halfway through. Remove and drain on paper towels.
  • To assemble, spread a little bean on each sope, add lettuce, the shrimp, and serve with red onion, fresh cheese, a sprig of epazote, and radish.
  • Serve and enjoy.
