Fried Shrimp with Chipotle Dressing

  • 1 cup mayonnaise
  • 2 teaspoons lime juice
  • 2 teaspoons chipotle chile in adobo sauce
  • 4 teaspoons green onion stalks, finely chopped
  • 1 tablespoon fresh cilantro, finely chopped
  • 20 shrimp, deveined, peeled, with tail
  • 1 cup flour
  • 2 eggs
  • 1 cup Chef Merito® fish fry
  • 1 1/2 cups vegetable oil, for frying

  • In a food processor, blend the mayonnaise with the lemon juice and chipotle until smooth and homogeneous.
  • Add the green onion tails and cilantro, process for 10 more seconds, refrigerate for 2 hours before serving.
  • Clean the shrimp, leaving the tail. Set aside.
  • Coat the shrimp by passing them through flour, egg, and Chef Merito® Fish fry, removing the excess.
  • Heat the oil in a deep pan, fry the shrimp for 2 minutes or until golden. Remove and place on paper towels to absorb excess oil. Serve with the dressing.
