These chipotle and mango shrimp are a flavorful dish that you can prepare quickly and impress everyone. Their spicy flavor combined with the sweetness of the mango creates the perfect balance in every bite.
Marinate the shrimp, peeled and deveined, in Hunt's® Chipotle BBQ Sauce, seasoning with salt, lemon zest, and juice, for about 20 minutes in the refrigerator.
In a mortar, grind the coconut and toasted sesame seeds with a pinch of cayenne pepper. Once ground, add 1/2 tsp of sesame seeds. Set aside.
Remove the excess Hunt's® Chipotle BBQ Sauce and coat the shrimp with the ground sesame and coconut mixture. Refrigerate for about 10 minutes.
After 10 minutes, bake the shrimp on a greased baking tray at 175°C for 5 minutes or until the crust is golden. Set aside.
In a medium saucepan, add the oil and onion and cook until translucent, then add the minced garlic and ginger, mixing for a few seconds before adding the mango. Cook until soft. At that point, add Hunt's® Chipotle BBQ Sauce and cook for a couple more minutes.
Remove from heat, add lemon juice, and season.
Let the mixture cool and blend.
