4 tablespoons pickles, finely chopped, for the dressing
4 tablespoons red onion, finely chopped, for dressing
1 tablespoon lime juice, for the dressing
2 tablespoons hot sauce, for the dressing

1 pineapple
2 1/2 cups pink shrimp
1/4 cups radish, finely chopped
1/4 cups tomato, finely chopped
1/4 cups celery, cut into half moons
1 cup pineapple, cut into cubes
1 avocado, for garnish
2 tablespoons green onion stalks, finely chopped
1/4 cups orange bell pepper
fresh cilantro, for garnish

For the dressing, in a bowl mix the mayonnaise with the ketchup, pickles, red onion, lime juice, hot sauce, and season with salt and pepper. Set aside.
Cut the pineapple in half and using a knife or spoon, remove the pulp, chop it into small pieces, and set aside.
In a bowl, mix the shrimp with the pineapple, radishes, tomato, celery, green onion stalks, bell pepper, cilantro, and the dressing. Season with salt and pepper.
