Pineapple Filled with Hawaiian Salad and Shrimp

  • 4 tablespoons pickles, finely chopped, for the dressing

  • 2 tablespoons hot sauce, for the dressing

  • 1 pineapple
  • 2 1/2 cups pink shrimp
  • 1/4 cups radish, finely chopped
  • 1/4 cups tomato, finely chopped
  • 1/4 cups celery, cut into half moons
  • 1 cup pineapple, cut into cubes
  • 1 avocado, for garnish
  • 2 tablespoons green onion stalks, finely chopped
  • 1/4 cups orange bell pepper
  • fresh cilantro, for garnish
  • saltine crackers, to accompany

  • For the dressing, in a bowl mix the mayonnaise with the ketchup, pickles, red onion, lime juice, hot sauce, and season with salt and pepper. Set aside.
  • Cut the pineapple in half and using a knife or spoon, remove the pulp, chop it into small pieces, and set aside.
  • In a bowl, mix the shrimp with the pineapple, radishes, tomato, celery, green onion stalks, bell pepper, cilantro, and the dressing. Season with salt and pepper.
  • Fill the pineapple with the salad, garnish with a fan of avocado and fresh cilantro. Serve with salty crackers.
