For the dressing, in a bowl mix the mayonnaise with the ketchup, pickles, red onion, lime juice, hot sauce, and season with salt and pepper. Set aside. Cut the pineapple in half and using a knife or spoon, remove the pulp, chop it into small pieces, and set aside.
