  • 4 cups hominy corn, precooked

  • 2 cloves garlic
  • 8 guajillo chiles, deveined for the sauce

  • 500 grams shrimp, clean and peeled, reserving some with heads for decoration

  • 20 radishes, sliced to accompany
  • 2 tablespoons oregano, to accompany
  • 8 limes, halved, to accompany
  • 8 tostadas, to accompany
  • 1/2 cups sour cream, to accompany

  • In a pressure cooker over medium heat, cook the corn with onion and garlic for 20 minutes after the valve starts to sound. Set aside.
  • For the sauce, soak the chiles in hot water for 15 minutes or until soft.
  • Blend the chiles with a little of the soaking liquid along with the garlic, onion, pepper, cumin, and clove.
  • Add the sauce to the corn preparation. Cook uncovered for 20 minutes over low heat, stirring occasionally.
  • Add the peeled shrimp with heads to the pozole and continue cooking for 5 to 10 more minutes or until the shrimp are cooked. Season with salt.
  • Serve and accompany with lettuce, radish, onion, oregano, lime, and tostadas with cream.
