Peel and clean the shrimp, leaving only the tails. Soak the skewers in water for 15 minutes. Heat the grill and add a bit of olive oil.
In a bowl, mix the honey, soy sauce, and vinegar. Assemble the skewers with shrimp, a piece of pineapple, a piece of green onion, and repeat.
Place the skewers on the grill for two minutes, flip and brush with the sauce, flip again and brush once more. Leave them on the grill until the pineapple and green onion are slightly charred, about 3 minutes.
