Mexican Shrimp Ceviche

If you want something fresh for a hot day, this Mexican-style shrimp ceviche is super easy and delicious; serve it with tostadas or crackers and enjoy it as a snack or cold appetizer.

  • 2 cups shrimp, small, cleaned and shell-free
  • 1/2 white onions, finely chopped
  • 5 tomatoes, finely chopped
  • 4 serrano chiles
  • 1 tablespoon fresh cilantro, finely chopped
  • 3/4 cups lime juice
  • 1/4 cups olive oil
  • 1 teaspoon salt
  • 2 pinches pepper
  • 5 drops hot sauce
  • 2 limes, in quarters, for decoration
  • 1/2 cups tortilla chips, corn for decoration

  • In a large bowl, place the shrimp, onion, tomatoes, chiles, and cilantro. Combine.
  • In a separate container, mix the lime juice with the oil, salt, pepper, and sauce very well.
  • Add the juice mixture to the shrimp and stir. Cover with plastic wrap and let marinate in the refrigerator for 45 minutes or until the shrimp have changed color.
  • Serve and garnish with lime quarters and corn tortilla chips.
