Shrimp in Creamy Coconut Sauce

  • 600 grams medium-sized shrimp, peeled and cleaned
  • 2 tablespoons olive oil, (divided)
  • salt and pepper
  • 1 teaspoon chile seeds, (crushed pepper)
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups onion, finely chopped
  • 1 bell pepper, julienned orange
  • 1 red bell pepper, julienned
  • 2 tomatoes, diced
  • 1/4 cups tomato purée
  • 1 sprig basil, fresh
  • 1 sprig fresh cilantro
  • 1 cup Silk® coconut sugar free
  • 1 teaspoon ginger, ground
  • 1/2 teaspoons paprika
  • 1 serrano chile, sliced for decoration

  • In a bowl, marinate the shrimp with one tablespoon of olive oil, salt, pepper, chili seeds, and garlic for about 15 minutes.
  • Heat a deep skillet over medium heat with one tablespoon of olive oil and cook the onion until transparent. Add the peppers and cook for 1 minute, season with salt and pepper. Add the tomatoes, puree, basil, parsley and cook for 2 minutes.
  • Once the vegetables are cooked, add one cup of Silk® unsweetened coconut, ginger, and paprika, cook for one minute and season to your liking. Cool slightly and blend until smooth and homogeneous.
  • In the same pan, cook the marinated shrimp for about 3 minutes or until they change color, add the sauce and let it come to a boil, adjust seasoning and remove from heat.
  • Serve the shrimp with the sauce and garnish with sliced serrano chili, cilantro leaves, and finely chopped fresh basil.
