Ingredients: 600 grams medium-sized shrimp, peeled and cleaned; 2 tablespoons olive oil, (divided); salt and pepper; 1 teaspoon chile seeds, (crushed pepper); 1 tablespoon garlic, finely chopped; 1/4 cups onion, finely chopped; 1 bell pepper, julienned orange; 1 red bell pepper, julienned; 2 tomatoes, diced; 1/4 cups tomato purée; 1 sprig basil, fresh; 1 sprig fresh cilantro; 1 cup Silk® coconut sugar free; 1 teaspoon ginger, ground; 1/2 teaspoons paprika; 1 serrano chile, sliced for decoration; fresh cilantro, for decoration; basil, chopped, for decoration

In a bowl, marinate the shrimp with one tablespoon of olive oil, salt, pepper, chili seeds, and garlic for about 15 minutes. Heat a deep skillet over medium heat with one tablespoon of olive oil and cook the onion until transparent. Add the peppers and cook for 1 minute, season with salt and pepper. Add the tomatoes, puree, basil, parsley and cook for 2 minutes.
