Shrimp in Mango and Chipotle Sauce

  • 2 mangoes, chopped
  • 1/4 cups lime juice
  • 2 tablespoons I Can't Believe It's Not Butter®
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons chipotle chile, ground
  • 1 tablespoon ginger, finely chopped
  • 1/4 cups raw sugar
  • salt
  • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 500 grams shrimp, clean and peeled
  • salt and pepper
  • 1 tablespoon lemon zest
  • 1 mango, diced
  • 1 tablespoon chives, chopped, for garnish
  • 1/2 avocados, sliced, for garnish

  • For the sauce, blend the mango pulp with the lemon juice until you achieve a smooth mixture.
  • In a pot over medium heat, melt two tablespoons of I Can’t Believe It’s Not Butter® and cook the garlic until fragrant. Add the chipotle pepper, ginger, brown sugar, and continue cooking until the sugar dissolves.
  • Incorporate the mango pulp and cook until the mixture thickens, season with salt and set aside.
  • In a skillet over medium heat, cook the bacon until browned, add the onion and garlic, and cook until they are shiny. Add the shrimp, season with salt and pepper, drizzle with the mango sauce, and cook until they are cooked through and shiny.
  • Incorporate the yellow lemon zest, mango cubes, and scallions, and serve. Garnish with avocado and accompany with yellow lemon.
