Chipotle Shrimp Tacos

Shrimp tacos are delicious, and with this chipotle recipe, they will be extra special, as they are grilled and marinated with a marinade that, in addition to chipotle, includes garlic, cayenne pepper, paprika, black pepper, butter, and olive oil. Prepare them with some cabbage, avocado, cilantro, and sauce to taste.

  • 20 shrimp, medium peeled
  • 1 cup red cabbage, grated
  • 1 bunch fresh cilantro
  • 2 avocados
  • 1/2 kilos corn tortillas
  • 3 chipotle chiles, finely chopped chipotle pepper for the marinade
  • 1 tablespoon adobo sauce, chipotle pepper for the marinade
  • 2 tablespoons garlic, granulated for the marinade
  • 1/2 teaspoons cayenne pepper, for the marinade
  • 1 tablespoon paprika, for the marinade
  • 1 tablespoon black pepper, for the marinade
  • 1/2 sticks unsalted butter, at room temperature, for the marinade
  • 2 tablespoons olive oil, for the marinade
  • 2 güero chiles, for the sauce
  • 2 serrano chiles, for the sauce
  • 1/2 cucumbers, for the sauce
  • 3 lime juice, for the sauce
  • 2 tablespoons soy sauce, for the sauce
  • 2 tablespoons Maggi seasoning sauce, for the sauce

  • Prepare your Weber® grill for high direct heat (450° - 550 °F or 232° - 287 °C).
  • Prepare the sauce by placing the chiles over direct heat to roast them for about 8 to 10 minutes. Chop the cucumber with the skin on, but remove the seeds. Remove the chiles from the grill and chop them to the same size as the cucumber. In a bowl, combine the lime juice, soy sauce, Maggi seasoning, chopped chiles, and cucumber. Set aside.
  • In another bowl, mix all the marinade ingredients until you have a homogeneous mixture. Add the shrimp to this mixture and marinate for 10 minutes in the refrigerator.
  • Remove the shrimp from the marinade and grill them over high direct heat for 3 minutes per side. Remove and set aside.
  • To serve, prepare your tacos with shrimp, cabbage, avocado, cilantro, and sauce to taste.
