10 guajillo chiles, seedless and soaked (for the sauce)

3 allspice berries, for the sauce
20 milliliters apple cider vinegar, for the sauce

6 bell pepper, of colors (for the baked peppers)
20 milliliters vegetable oil, (for the baked peppers)

4 Habanero chiles, green (for the habanero sauce)
4 Habanero chiles, yellow (for the habanero sauce)
10 milliliters white vinegar, (for the habanero sauce)
100 milliliters olive oil, (for the habanero sauce)
salt and pepper, necessary amount (for the habanero sauce)
1 red onion, (for the habanero sauce)
3 limes, (for the habanero sauce)

Clean the shrimp. Season with salt and pepper and marinate in the guajillo sauce.
For the guajillo sauce: Grind the sauce ingredients until a paste is obtained.
For the peppers: Add a little fat and bake at 200 °C until they roast. Remove from the oven, sweat, peel, devein, and cut into medium julienne strips.
For the habanero sauce. Roast the chiles on the same tray as the peppers. Grind with vinegar and olive oil, season and set aside.
For the red onion: Slice very thinly. Add finely chopped cilantro and lime juice, salt, and pepper.
For the shrimp: Place the shrimp on a baking tray and bake for 20 minutes at 200 °C.
