Spaghetti Squash with Oriental Shrimp

  • 2 tablespoons white onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 1 cup carrot, cut into strips
  • 1/2 cups soy
  • 1 cup chinese pea
  • 1 cup shrimp, cleaned
  • 2 pumpkins, cut into thin strips
  • 1 cup parsley
  • 2 tablespoons árbol chile, cut into rings
  • 1 cup green onion, cut into strips, only the tail
  • 1 pinch salt
  • 1 pinch pepper

  • Heat a deep skillet or a wok for oriental cooking over medium heat with sesame oil. Add the white onion and garlic until they have a shiny color, then add the ginger and cook for 3 more minutes.
  • Add the carrot with the soy sauce, add the Chinese pea pods with the shrimp to cook, add the squash, the parsley leaves, season with the chili, the green onion tails, and salt and pepper to taste.
