Mix Kikkoman® soy sauce with lemon, flour, cornstarch, baking powder, and sparkling water in a bowl until you obtain a homogeneous mixture. Set aside.
Dip the shrimp in the tempura mixture and fry them in a pot with enough vegetable oil over medium heat. Remove from the pot when golden and place on a plate with absorbent paper.
To assemble the sandwich: Line a board with non-stick plastic, place a sheet of seaweed and add a layer of rice 2 cm thick, a layer of cheese, a layer of carrot, a layer of cucumber, a layer of avocado, a layer of shrimp, another thick layer of rice, and close the seaweed sheet by bringing the ends to the center. Shape it like a hamburger with your hands, wrap in plastic, and refrigerate for 15 minutes.
Remove the plastic from the sushi sandwich and cut in half.
Serve the sushi sandwich on a large plate and accompany with Kikkoman® soy sauce with lemon.
