4 tablespoons capers, drained
4 fish fillets, of 180 grams each
margarine
1 onion, medium
220 grams tomato
100 grams tomato sauce
4 tablespoons vinegar
1 teaspoon pimentón, Spanish
2 cloves garlic, crushed
4 tablespoons cornstarch
1 teaspoon cumin powder
2 egg whites, lightly beaten
230 grams spinach, tender
1 teaspoon turmeric, powder

Cut the tomatoes into large cubes, the onion into julienne, mix in a bowl, add vinegar and crushed garlic.
Heat a skillet with a tablespoon of margarine, when it is melted lower the heat and pour the mixture from the bowl until the tomatoes soften.
In a separate bowl, mix the cornstarch and spices. Dredge the fish in it, shaking off the excess.
Then dip it in the egg whites. Fry in enough margarine in a separate skillet.
Mix the spinach and capers in a salad bowl. Add the softened tomatoes and tomato sauce to the salad bowl.
Serve over the fish
