Spanish-style fillet

  • 4 tablespoons capers, drained
  • 4 fish fillets, of 180 grams each
  • margarine
  • 1 onion, medium
  • 220 grams tomato
  • 100 grams tomato sauce
  • 4 tablespoons vinegar
  • 1 teaspoon pimentón, Spanish
  • 2 cloves garlic, crushed
  • 4 tablespoons cornstarch
  • 1 teaspoon cumin powder
  • 2 egg whites, lightly beaten
  • 230 grams spinach, tender
  • 1 teaspoon turmeric, powder

  • Cut the tomatoes into large cubes, the onion into julienne, mix in a bowl, add vinegar and crushed garlic.
  • Heat a skillet with a tablespoon of margarine, when it is melted lower the heat and pour the mixture from the bowl until the tomatoes soften.
  • In a separate bowl, mix the cornstarch and spices. Dredge the fish in it, shaking off the excess.
  • Then dip it in the egg whites. Fry in enough margarine in a separate skillet.
  • Mix the spinach and capers in a salad bowl. Add the softened tomatoes and tomato sauce to the salad bowl.
  • Serve over the fish
