Squid with Alfredo Pasta

Prepare this delicious creamy pasta with white wine, squid, mushrooms, spinach, and of course a bit of Parmesan cheese to finish. Serve with slices of crusty bread and enjoy with your family.

  • 500 grams fettuccine pasta
  • 4 tablespoons butter
  • 4 tablespoons wheat flour Great Value®
  • 1 cup white wine
  • 2 cups Great Value® whole milk
  • 1 cup Manchego cheese, grated
  • 1 teaspoon Great Value® plain salt
  • 1/2 teaspoons pepper
  • 1 pinch nutmeg
  • 2 tablespoons Extra Special Olive Oil®
  • 2 cups squid, in rings
  • 1 can whole mushrooms in brine Great Value®
  • 1 cup spinach
  • 2 pinches Great Value® plain salt
  • 1 pinch pepper
  • 4 tablespoons Parmesan cheese, grated

  • In a pot with boiling water and salt, cook the fettuccine until al dente, drain and set aside.
  • In a small pot over medium heat, melt the butter and add the flour all at once. Cook for a few minutes and add the white wine. Mix very well with the help of a whisk.
  • Add the milk and continue cooking without stopping to stir, for about 5 to 10 minutes. Incorporate the cheese and cook until it melts completely. Season with salt, pepper, and a touch of nutmeg. Set aside.
  • In a deep skillet over medium heat, heat the olive oil and fry the squid. Add the mushrooms and spinach and cook until the liquid reduces.
  • Incorporate the pasta and the sauce and mix very well. Cook for 5 minutes. Season with salt and pepper and serve with Parmesan cheese. Buy HERE
