In a pot with boiling water and salt, cook the fettuccine until al dente, drain and set aside.
In a small pot over medium heat, melt the butter and add the flour all at once. Cook for a few minutes and add the white wine. Mix very well with the help of a whisk.
Add the milk and continue cooking without stopping to stir, for about 5 to 10 minutes. Incorporate the cheese and cook until it melts completely. Season with salt, pepper, and a touch of nutmeg. Set aside.
In a deep skillet over medium heat, heat the olive oil and fry the squid. Add the mushrooms and spinach and cook until the liquid reduces.
Incorporate the pasta and the sauce and mix very well. Cook for 5 minutes. Season with salt and pepper and serve with Parmesan cheese.
