In a pot with boiling water and salt, cook the fettuccine until it is al dente, drain and reserve.
In a small pot over medium heat, melt the butter and add the flour at once. Cook a few minutes and add the white wine. It integrates very well with the help of a balloon whisk.
Add the milk and continue cooking without stopping to move, about 5 to 10 minutes. Add the cheese and cook until it melts completely. Season with salt, pepper and a touch of nutmeg. Reservation.
In a deep frying pan over medium heat, heat the olive oil and fry the squid. Add the mushrooms and spinach and cook until the liquid is reduced.
Add the pasta and the sauce and mix very well. Cook 5 minutes. Season with salt and pepper and serve with Parmesan cheese.
