Squid Sandwich with Black Garlic Alioli

  • 2 cloves garlic, black
  • 40 milliliters extra virgin olive oil
  • black aioli
  • 1 clove garlic, black
  • 40 grams mayonnaise

  • Cut the squid into very thin rings.
  • Coat the cut squid in flour and fry in plenty of hot oil. Once they are golden and crispy, they will be ready. Drain well on paper towels. Open the bread and toast it to make it crunchier.
  • Traditional homemade black alioli: Peel the two cloves of black garlic, mash them in a mortar with a bit of salt, and gradually add the oil in small amounts while continuing to mash the garlic. When a homogeneous and consistent sauce is obtained, our black garlic alioli will be ready.
  • Easy black alioli: Peel the clove of black garlic and mash it in the mortar. Add the mayonnaise and mix well in the mortar until it acquires a homogeneous color.
