Today we bring you a variant of what is considered the most typical dish of Madrid, the calamari sandwich. Any inhabitant or visitor of the capital has a mandatory gastronomic stop to eat this dish, a sandwich that looks for its taste, simplicity and cost.

  • 150 grams squid
  • 1 pinch salt
  • enough flour, to coat
  • enough olive oil, to fry
  • 2 cloves garlic, black
  • 40 milliliters extra virgin olive oil
  • enough Alioli black
  • 1 clove garlic, nergo
  • 40 grams mayonnaise


Cut the calamari into very thin rings.
Flour the sliced ​​squid and fry in plenty of hot oil. Once they are golden and crispy they will be ready. Drain well on blotting paper. Open the bread and take it out to make it more crunchy.
Alioli homemade black traditional: Peel the two cloves of black garlic, mash them in the mortar with a little salt and go introducing the oil very little by little and in small quantities, without stopping to grind the garlic. When a homogeneous and consistent sauce is obtained, our black garlic alioli will be ready.
Alioli black to not complicate your life: Peel the clove of black garlic and mash it in the mortar. Add the mayonnaise and mix well in the mortar until it acquires a homogeneous color.
