Deep-Fried Sushi Rolls

Skip the take-out menu and get these delish deep-fried sushi rolls ready in a snap! These tasty fried sushi rolls stuffed with drool-worthy cream cheese, carrots, surimi, and cucumber will be loved by everyone at home.   • 1 1/2 cups sushi rice
  • water, cold, for rinsing the rice
  • 3 cups water, hot, for cooking the rice
  • 4 tablespoons rice vinegar
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 5 nori
  • 1 cup cream cheese, cut into sticks, for the stuffing
  • 1 cup cucumber, cut into sticks, peeled, for the stuffing
  • 1 cup carrot, cut into sticks, peeled, for the stuffing
  • 1 1/2 cups surimi, cut into sticks, peeled, for the stuffing
  • 1 cup flour, for breading
  • 2 eggs, for breading
  • 2 cups panko, for breading
  • vegetable oil
  • cucumber, cut into strips, for garnish
  • candied sesame seeds, for garnish
  • soy, with serrano chile, for serving

  • Soak rice in cold water for 5 minutes, drain, and repeat 3 times.
  • In a small pot with a lid, add rice and 3 cups of hot water. Cook for 10 minutes over low heat. Remove from heat and spread on a baking sheet. Let it cool for 15 minutes.
  • In a bowl, mix rice vinegar, sugar, and salt. and spoon over cold rice. Let sit for a few minutes.
  • For assembling sushi rolls: In a plastic wrap-lined bamboo sushi rolling mat, place nori. Wet your hands and spread rice over nori. Flip it over and top with cream cheese sticks, cucumber, carrots, and surimi. Roll sushi mat pressing gently. Refrigerate for 10 minutes. 
  • For breading sushi roll: Coat sushi roll with flour, dip it in egg mixture, and bread with breadcrumbs. In a skillet with vegetable oil, fry breaded sushi roll. Drain.
  • Cut deep fried sushi roll into 0.3-inch slices. Serve deep fried sushi rolls on a plate with cucumber, sesame seeds, soy sauce, and serrano chiles.
