Cucumber Sushi with Tampico Bits

This version of sushi is just as delicious but low in carbohydrates. Prepare this cucumber sushi recipe with spicy filling in just 10 minutes and enjoy a light and flavorful dish. The filling is made with tampico-style sauce with surimi, but cauliflower, broccoli, and carrot bits are also added to complement it. Serve it with soy sauce, a little masago, and chipotle sauce.

  • 1 cup surimi, finely chopped, for tampico sauce
  • 1/4 cups mayonnaise, for tampico sauce
  • 1/8 cups rice vinegar, for tampico sauce
  • 1/8 cups lime juice, for tampico sauce
  • 3 tablespoons salsa, ponzu for tampico sauce
  • 1/4 red onions, for tampico sauce
  • 1/2 cups cream cheese, for tampico sauce
  • 1 serrano chile, for tampico sauce
  • 1 pinch salt, for tampico sauce
  • 1 pinch pepper, for tampico sauce
  • 1/4 cups masago, for chipotle sauce
  • 2 tablespoons ground chipotle chile, for chipotle sauce
  • 1/4 cups mayonnaise, for chipotle sauce
  • 1 tablespoon lime juice, for chipotle sauce
  • 2 cucumbers
  • 1 cup rice, cooked, for filling
  • salmon, cut into long strips, for filling
  • black sesame seeds, for filling

  • In a bowl, mix the California Bits Eva® with the surimi, mayonnaise, rice vinegar, lemon juice, ponzu sauce, red onion, cream cheese, and serrano chili; season with salt and pepper. Set aside in the refrigerator.
  • In a bowl, mix the masago, ground chipotle, mayonnaise, and lemon juice until you achieve a homogeneous mixture. Set aside.
  • On a cutting board, cut the cucumber in half using a knife, hollow out the center, and fill it with the tampico preparation, rice, salmon, cut into 2 mm thick slices, and set aside.
  • Serve with chipotle sauce and sesame seeds, and accompany it with soy sauce. Enjoy.
