These jícama and surimi taquitos are very fresh and delicious. Thin slices of jícama with a creamy surimi mixture and pieces of mango, along with an avocado puree that you will love. Don't miss out on making them!
For the filling, in a bowl mix the surimi with red onion, celery, corn kernels, palm hearts, mayonnaise, chipotle, salt, and probiotic. Set aside.
For the puree, using a fork, mash the avocado and mix with ginger, lime juice, and soy sauce.
Form the jícama tacos by spreading a bit of avocado puree over the jícama slices, add some of the surimi filling, place mango cubes, and finish with alfalfa sprouts.
