  • 1/4 cups red onion, finely chopped
  • 3 cups surimi, diced
  • 1/2 cups cucumber, diced
  • 1/2 cups cuaresmeño chile, diced
  • 1/4 cups fresh cilantro, finely chopped
  • 2 tablespoons salsa, macha
  • 1/2 cups yellow corn kernels
  • 1/2 cups lime juice
  • 1 pinch salt and pepper
  • 1/2 cups Clemente Jacques® ranch dressing
  • Romaine lettuce, large and beautiful leaves
  • 1 cup Clemente Jacques® baked Italian croutons, For salad and for topping

  • For the salad, in a bowl mix the onion with the surimi, cucumber, cuaresmeño chili, cilantro, macha sauce, and yellow corn. Season with lime juice, salt, pepper, and ranch dressing. Add the Italian Croutons Clemente Jacques® and mix until incorporated.
  • To assemble your tacos, place the romaine lettuce on a cutting board and use a cutter to cut out circles of lettuce. Serve the salad you made earlier, garnish with cilantro leaves, and enjoy.
