  • 2 cups surimi
  • 1/2 cups lime juice
  • 1/2 cups olive oil
  • 1/4 cups white vinegar
  • 1 tablespoon oregano, ground
  • salt
  • 1/2 cups red onion, in thin strips
  • 1 cup tomato, in small cubes
  • 1/2 cups cilantro, finely chopped
  • 1 cup lettuce, in thin strips
  • 1/4 cups Jalapeño chile, finely chopped
  • 1 cup avocado, in medium cubes
  • tostadas, to accompany

  • Shred the surimi to obtain thin strips. Set aside.
  • In a bowl, mix the lemon juice, olive oil, white vinegar, oregano, and salt. Set aside.
  • In a bowl, mix the surimi, red onion, tomato, cilantro, lettuce, and jalapeño pepper. Dress with the vinaigrette and mix very well.Garnish with avocado, cilantro leaves, and jalapeño pepper. Serve the salad with toast!
