Surimi Salad Rolls

You won't be able to resist trying this amazing recipe for surimi salad rolls, as it is a creamy, light, and very healthy option for lunch or dinner. The best part is that the rolls are wrapped in French lettuce leaves and also incorporate a good amount of vegetables; it's the ideal dish for both kids and adults!

  • 3 cups surimi, in medium cubes
  • 1/2 cups cucumber, in medium cubes
  • 1/2 cups celery, in medium cubes
  • 1/2 cups red onion, in strips
  • 1 cup yellow corn
  • 1 cup carrot, in medium cubes
  • 1/4 cups mayonnaise
  • 1/2 cups table cream
  • 1/4 cups lime juice
  • salt
  • pepper
  • 1/4 cups parsley, finely chopped
  • 1 Eva® butterhead lettuce
  • soy sauce, for serving

  • In a bowl, mix the surimi, cucumber, celery, red onion, yellow corn, carrot, mayonnaise, half-and-half, and lime juice. Then, season with salt and pepper and add the parsley. Mix until all ingredients are combined. Reserve the surimi.
  • Separate the leaves of French Lettuce Eva® and you can cut them into rectangles.
  • Fill each leaf with the surimi salad and roll it up. Refrigerate the surimi salad rolls for a few minutes.
  • Place the surimi salad rolls on a flat plate, decorate with parsley leaves, and serve with your dressing of choice.
