  • For the rice, in a small pot over medium heat, cook the rice with water covered for 2 minutes. After that time, lower the heat and cook for about 13 more minutes without uncovering. Remove from heat and let it rest for 10 minutes. Cool to room temperature.
  • In a small pot, heat the vinegar without bringing it to a boil, and add the sugar and salt. Cook until the sugar is completely dissolved, then let it cool.
  • Mix the rice with the vinegar using a wooden spatula, being careful not to stir too much and trying not to break it. Set aside.
  • In a bowl, mix sriracha sauce, sesame oil, and mayonnaise. Reserve 4 tablespoons for decoration and combine the rest with the tuna and chopped green onion. Set aside.
  • For the avocado puree, in a bowl mash the avocado with a fork and mix with soy sauce, orange juice, lime juice, and ginger. Set aside.
  • Build the little tower by placing a little rice in a ring. Press with a fork and then add avocado puree and spread it.
  • Add tuna, mango, red onion, and cream cheese. Remove the ring and decorate with a tablespoon of the reserved spicy sauce and black sesame. Repeat until you have four little towers. Buy HERE
