Sweet and Sour Stir-Fry with Tuna Meatballs

Try these delicious Herdez® Tuna meatballs with soy sauce and a sweet and sour pineapple sauce that you will simply love. This sweet and sour stir-fry with meatballs is a different way to eat and enjoy tuna as an oriental dish.

  • 2 envelopes Herdez® tuna with soy sauce, 85 g each
  • 1/2 cups onion, finely chopped, for the meatballs
  • 1/2 cups carrot, grated, for the meatballs
  • 1/4 cups breadcrumbs, for the meatballs
  • 1/4 cups spearmint, finely chopped, for the meatballs
  • 1 egg, for the meatballs
  • sesame oil, for frying
  • 1 tablespoon ginger, grated, for the sauce
  • 1 1/2 cups pineapple juice, for the sauce
  • 3 tablespoons ketchup, for the sauce
  • 2 tablespoons rice vinegar, for the sauce
  • 1 tablespoon cornstarch, for the sauce
  • 1/4 cups sugar, for the sauce
  • 2 tablespoons sesame oil
  • 1/4 cups green onion, sliced
  • 1 cup green bell pepper, in strips
  • 1 cup yellow bell pepper, in strips
  • 1 cup pineapple, in triangles
  • 1 cup broccoli, in small pieces, cooked
  • salt

  • For the meatballs, in a bowl combine the Herdez® Tuna with soy sauce along with the onion, carrot, breadcrumbs, mint, and egg. Mix until you obtain a consistent mixture. Form medium-sized balls with your hands. Refrigerate for 30 minutes.
  • In a pan with enough hot sesame oil, fry the meatballs until golden. Drain and set aside.
  • For the pineapple sauce, mix in a bowl the ginger, pineapple juice, ketchup, rice vinegar, cornstarch, and sugar, incorporating with a whisk.
  • In a large pan with enough sesame oil, sauté the onion with the peppers. Add the pineapple, pineapple sauce, and broccoli, season with salt and pepper, and cook until the sauce begins to thicken.
  • Incorporate the tuna meatballs, drizzle with the sauce, and cook for 2 more minutes.
  • Serve hot, garnished with toasted sesame seeds and mint leaves.
