Tuna and Potato Croquettes

Recipe for tuna croquettes. They are very easy to make and can be served as a snack or as a main dish.

  • 4 potatoes, medium cooked
  • 1 can tuna
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon parsley, finely chopped
  • salt, to taste
  • vegetable oil, enough for frying the croquettes

  • The potatoes are perfectly mashed, then add the onion, parsley, salt, baking powder, and the egg;
  • mix well until a dough forms.
  • Let them rest for a few minutes; form small patties (12), place the tuna in the center and seal them, then coat them in breadcrumbs and fry in hot oil, making sure they brown evenly.
  • Cook them over low heat.
  • Serve accompanied by cucumber salad and onion rings; tomato with mayonnaise or cottage cheese.
