You will have no excuses to treat your family at mealtime, with these super crispy jalapeño tuna croquettes, filled with an exquisite mixture of cheeses like cream cheese, manchego cheese, and parmesan cheese, accompanied by a creamy chipotle dip.
4 tablespoons chipotle chile, ground, for the dressing
1 teaspoon fresh cilantro, finely chopped, for the dressing
1/2 cups Manchego cheese, grated
1/2 cups Parmesan cheese, grated
1/2 cups cream cheese
8 envelopes Atún Marina Azul® jalapeño
1 egg
1 cup breadcrumbs
1/4 cups white onion, finely chopped
1 tablespoon fresh cilantro, finely chopped
salt and pepper
1 cup breadcrumbs, for breading
1 cup corn flakes, for breading, crushed
2 cups vegetable oil, for frying

For the dressing, cream the cheese and add the mayonnaise, cream, chipotle chili, cilantro, and season with salt and pepper, mix until combined.
For the filling, in a bowl mix the manchego cheese, parmesan cheese, and cream cheese, mix very well.
In another bowl add Marina Azul® jalapeño tuna, the egg, breadcrumbs, white onion, cilantro, and season with salt and pepper. Mix until combined, using your hands shape into croquettes and add a bit of cheese filling and seal.
Coat the croquettes by passing them through flour, egg, and breadcrumbs mixed with corn flakes.
In a pan over medium heat, heat the oil, fry for 5 minutes or until golden, place on absorbent paper to remove excess oil.
Serve accompanied by the chipotle dressing.
