Season the tuna medallions with salt and pepper. Set aside.
Mix the amaranth, cilantro, onion in a bowl and coat the tuna medallions perfectly, forming a crust.
Heat 1 tablespoon of Nutrioli DHA® oil in a medium skillet over medium heat, seal the tuna medallion for 3 minutes on one side, then flip to finish cooking for another 3 minutes, being careful not to burn the amaranth.
Blend the cream, chili, cilantro, and garlic until perfectly smooth.
