Tuna in Amaranth Crust with Creamy Chili Sauce

This tuna fillet has a crunchy amaranth crust with red onion and is accompanied by a creamy chili sauce, but the best part is that it is sealed with Nutrioli DHA® oil, which contributes to brain, heart, and eye health.

  • 4 tuna, red, in medallions
  • 2 cups amaranth
  • 3 tablespoons fresh cilantro, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 4 pinches salt
  • 1/4 cups Nutrioli Dha® soy oil
  • 2 cups whipping cream
  • 2 serrano chiles
  • 2 sprigs fresh cilantro
  • 1 clove garlic, finely chopped
  • 2 cups Brussels sprouts, cooked
  • 1 pinch salt

  • Season the tuna medallions with salt and pepper. Set aside.
  • Mix the amaranth, cilantro, onion in a bowl and coat the tuna medallions perfectly, forming a crust.
  • Heat 1 tablespoon of Nutrioli DHA® oil in a medium skillet over medium heat, seal the tuna medallion for 3 minutes on one side, then flip to finish cooking for another 3 minutes, being careful not to burn the amaranth.
  • Blend the cream, chili, cilantro, and garlic until perfectly smooth.
  • Pour the sauce into a medium saucepan and cook over low heat for 5 minutes to thicken. Season.
  • Heat 1 tablespoon of Nutrioli DHA® oil in a medium skillet over medium heat, sauté the Brussels sprouts and season.
