Prepare these tuna medallions for festivities or important celebrations. They are very easy to cook, as well as delicious. Use Atún Dolores® to make them, as their careful packaging of the product will ensure a perfect presentation.
In a hot pot with melted butter, sauté the onion and garlic over low-medium heat for 3 minutes, or until they take on a shiny tone. Add the milk and heavy cream, bring to a boil, and incorporate the grated Manchego cheese, stirring constantly until the cheese melts.
Add the capers, salt, pepper, and herbs, and cook for 5 minutes. Remove from heat and keep warm.
On a cutting board, season the Atún Dolores® Premium Medallions with coarse salt and freshly ground black pepper.
Place the medallions in a hot skillet with olive oil, cook over low-medium heat for 8 minutes on each side. Remove from heat.
Place some cheese sauce on a wide plate, arrange the medallions, and drizzle with the same sauce, garnishing with fresh rosemary.
