Tuna Medallion in Cheese Sauce with Capers

Prepare these tuna medallions for festivities or important celebrations. They are very easy to cook, as well as delicious. Use Atún Dolores® to make them, as their careful packaging of the product will ensure a perfect presentation.

  • 1 tablespoon butter, in cubes
  • 2 tablespoons onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cup milk
  • 1/2 cups whipping cream
  • 3/4 cups Manchego cheese, grated
  • 1/4 cups capers
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper, freshly ground
  • 1/2 teaspoons fine herbs
  • 4 Dolores® premium yellow fin tuna medallions
  • 1 tablespoon coarse salt
  • 1 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil
  • 1 sprig fresh rosemary

  • In a hot pot with melted butter, sauté the onion and garlic over low-medium heat for 3 minutes, or until they take on a shiny tone. Add the milk and heavy cream, bring to a boil, and incorporate the grated Manchego cheese, stirring constantly until the cheese melts.
  • Add the capers, salt, pepper, and herbs, and cook for 5 minutes. Remove from heat and keep warm.
  • On a cutting board, season the Atún Dolores® Premium Medallions with coarse salt and freshly ground black pepper.
  • Place the medallions in a hot skillet with olive oil, cook over low-medium heat for 8 minutes on each side. Remove from heat.
  • Place some cheese sauce on a wide plate, arrange the medallions, and drizzle with the same sauce, garnishing with fresh rosemary.
