Tuna Medallions with Vegetables

Recipe for delicious tuna medallions with vegetables, very healthy.

  • 4 tuna, (medallion cut)
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 green bell peppers, in cubes
  • 2 potatoes, peeled and chopped into cubes
  • 2 tablespoons tomato purée
  • salt, and pepper
  • water, (amount needed)

  • Heat the oil and sauté the onion.
  • Add the garlic and bell pepper and let it sauté slightly.
  • Add the potatoes, the puree, and season with salt and pepper.
  • Add water to cover the vegetables and let it cook on low heat for 15 minutes.
  • Add the tuna medallions and continue cooking for 10 more minutes.
  • Adjust the seasoning. Serve with steamed rice and vegetables.
