Tuna Medallions with Vegetables

Recipe for rich tuna medallions with vegetables, very healthy.

  • 4 tuna, (medallion cut)
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 green bell peppers, diced
  • 2 potatoes, peeled and diced
  • 2 tablespoons tomato purée
  • salt, and pepper
  • water, (necessary amount)

  • The oil is heated and the onion is seasoned.
  • Add the garlic and the pepper and let it lightly fry.
  • The potatoes are added, the puree and season with salt and pepper.
  • Water is added to cover the vegetables and cook over low heat for 15 minutes.
  • Add the tuna medallions and continue cooking for 10 more minutes.
  • The seasoning is rectified. It is served with steamed rice with vegetables.
