Tuna Panuchos

Panuchos are a delicious recipe; prepare these different panuchos, which are small corn tortillas filled with refried beans, fried in lard, with delicious pibil-style tuna and accompanied by pickled onions and a spicy habanero sauce.

  • 50 grams achiote, in a bar
  • 1/4 cups orange juice, sour
  • 3 tablespoons white vinegar
  • 1 tablespoon oregano, Yucatecan
  • 1 tablespoon cumin
  • 4 allspice berries
  • 4 cloves
  • 1/4 cups water
  • 1 tablespoon coarse salt
  • 2 cloves garlic
  • 1/4 onions
  • 1 tablespoon vegetable oil
  • 1 package Atún Dolores® shredded smoked tuna
  • 9 corn tortillas
  • 1/2 cups refried beans
  • 1 tablespoon lard
  • 2 eggs, cooked
  • 1/2 cups red onion, pickled, for accompaniment
  • Habanero hot sauce, black, for accompaniment

  • For the marinade, blend all the ingredients until you achieve a smooth mixture.
  • Heat a skillet over medium heat with the oil, add the shredded Smoked Pork Loin and Dolores® Tuna along with the previous preparation, and cook for 10 minutes or until the liquid evaporates. Set aside.
  • Using a knife, cut the tortilla, fill it with beans, and set aside.
  • Heat a skillet over medium heat with the lard and fry the bean-filled tortillas, top with the pibil-style tuna preparation, serve 3 panuchos on a plate, and decorate with pickled red onions and the boiled egg. You can accompany with black habanero sauce if you want more spiciness.
