The panuchos are a delicious recipe, prepare these different panuchos, it is a small corn tortilla filled with refried beans, fried in lard, with delicious tuna pibil and accompanied with pickled onions and a spicy sauce of habanero.

Ingredients

6 servings
  • 50 grams of achiote in bar
  • 1/4 of Cup of orange juice sour
  • 3 spoonfuls of White vinegar
  • 1 tablespoon of oregano yucateco
  • 1 tablespoon of cumin
  • 4 pieces of peppercorn
  • 4 pieces of whole clove
  • 1/4 of Cup of Water
  • 1 tablespoon of sea salt
  • 2 cloves of garlic
  • 1/4 of piece of onion
  • 1 tablespoon of vegetable oil
  • 1 package of Shredded smoked loin Tuna Dolores®
  • 9 pieces of Corn tortillas
  • 1/2 Cup of refried beans
  • 1 tablespoon of lard
  • 2 pieces of egg Cooked
  • 1/2 Cup of red onion pickled, to accompany
  • to taste of sauce black habanero, to accompany

    Preparation

    For the marinade, blend all the ingredients until a homogeneous mixture is obtained.
    Heat a skillet over medium heat with the oil add the shredded Smoked Loin Tuna Dolores® with the previous preparation, cook for 10 minutes or until the liquid evaporates. Reservation.
    With a knife cut the tortilla, stuffed with beans, reserve.
    Heat a pan over medium heat with the lard and fry the tortillas stuffed with beans, cover with the preparation of tuna to the pibil, serve in a plate 3 panuchos and decorate with pickled purple onions and the boiled egg. You can accompany it with black habanero sauce if you want more spicy.

    PRESENTATION

    Serve the panuchos and decorate with a slice of egg pickled onions.

    TIPS

    When you cook the tortilla and inflate cut with a knife in the pancita that is formed to the tortilla otherwise it will be very difficult to fill with beans.
