In a bowl, beat the cream cheese and add the chipotle chili, mayonnaise, and season with salt and pepper. Place a quarter in a piping bag and set aside.
In another bowl, mix the tuna with the tomato, red onion, yellow corn, peas, serrano chili, and season with salt and pepper.
Cut the edges of the bread and on a non-stick plastic wrap, place the slices of bread and use a rolling pin to press and flatten the slices together.
Spread the chipotle cheese over the bread, and add the tuna. Using the non-stick plastic wrap, roll it up. Refrigerate for 20 minutes.
Decorate with cheese, tomatoes, olives, and parsley. Cut into 2 cm thick slices and serve.
