Cheesy Tuna Sandwich Roll

  • 3 packages cream cheese, 6.7 oz each
  • 1/2 cups chipotle chile, ground
  • 1/4 cups mayonnaise
  • salt and pepper
  • 2 cups canned tuna, drained
  • 1/2 cups tomato, cut into small-sized cubes
  • 1/2 cups red onion, finely chopped
  • 1/2 cups yellow corn kernels
  • 1/4 cups peas
  • 2 serrano chiles, finely chopped
  • 1 package sandwich bread
  • cherry tomato, for garnish
  • green olives, for garnish
  • parsley, for garnish

  • In a bowl, beat cream cheese and add chipotle chile and mayonnaise. Season with salt and pepper. Place ¼ of the mixture into a piping bag with a nozzle and set aside.
  • In another bowl, mix tuna, tomato, red onion, yellow corn kernels, peas, and serrano chiles. Season with salt and pepper.
  • Cut the crusts off the sandwich bread. Place bread slices on top of plastic wrap and using a rolling pin flatten the edges onto each other so that they stick together.
  • Spread cheese mixture on the bread and add tuna mixture. Using plastic wrap, roll. Refrigerate for 20 minutes.
  • Garnish with piped cheese mixture, tomatoes, olives, and parsley. Cut cheesy tuna sandwich roll into 0.7-inch-thick slices and serve.
